I'm going to make the statement that I wish Donna was never in the band. Haters gonna hate

Is it necessary to get comfortable with their studioalbums first, or can I jump to their praised live material right away?

No doubt they are! I just think it's a matter of [almost] always being able to find many different varied & superior versions among the 25 years of touring. As much as I might enjoy Blues for Allah when I give it a spin (for the unreleased material), the likes of Music Never Stopped and Crazy Fingers, however pleasant, don't really measure up. But in any case, the amazing songwriting shines through in either fashion!

I'd like to mention though that, to these ears anyway, their studio releases are actually quite good.

Haha, yeah, there's a load of stuff... but most people don't really pay too much attention to the official releases and keeping track of all that. We tend to just go straight into the archives ourselves, and I think the average Dead fan's listening is at least 98% live shows.

In most cases, parts of the 2nd sets WERE completely random. If you listen to the shows around Skull & Roses period especially you can hear them trying to lead into other stuff and sometimes just giving up; Jerry liked to try for Wharf Rat a whole lot. Obviously some things were naturally paired together as the basis for jams (Scarlet>Fire, Help>Knot>Franklin, Prophet>everything etc) but every so often a Candyman or a Ramble On Rose or He's Gone would appear in the 2nd set out of nowhere. But for the best example check out The Wheel from 5/7/77. As far as I know it's the only time it was EVER played coming out of Eyes. They didn't plan that kinda thing!
